摘 要

社会经济的演变是一个轮回过程。工业革命以来,一直是第一、二产业为主。20世纪初,第一、二产业在全部社会经济中的分量逐渐下降,第三产业的社会影响与日俱增。21世纪的今天,这种发展趋势更加明显。

第三产业中的餐饮业是一个最能体现人民生活水平和经济发展状况的行业,是一个社会活动的缩影。伴随几十年来的经济快速增长,世界餐饮连锁业正以每年10%左右的快速发展,成为全球最具发展潜力的行业。随着中国人民日益增长的物质文化需求不断增长,和全球经济的一体化,世界餐饮连锁行业面临着前所未有的激烈竞争。纵观我国餐饮连锁市场,人们较熟悉的餐饮品牌多是外资品牌,如:麦当劳、肯德基和必胜客;而我国的传统餐饮面对来势汹汹的外资品牌,却发力无术,发展举步维艰。由此可见,我国餐饮连锁企业要想在激烈的竞争中立于不败之地,必须解放思想,开拓创新,在坚持中国传统文化特色的基础上借鉴国内外先进经营和管理经验,以与时俱进的理论勇气,分析研究国内外成功企业的经营特点,研究餐饮连锁企业出现的新问题、新内容,探索新的餐饮连锁业赢利模式。

本文通过对餐饮连锁企业的经营策略的探索与研究,分析了国内外餐饮连锁企业的经营策略,提出餐饮连锁企业运营过程中出现的问题,对餐饮连锁企业经营策略的选择与实施提出创造性的方案,供餐饮连锁企业参考和选择,特别是中国的餐饮连锁企业,使餐饮连锁企业的管理与建设上有一套新思路,从而促进餐饮连锁企业健康良好的发展。

Socio-economic evolution is a process of reincarnation. Industrial revolution, has been the primary and secondary industry based. Early 20th century, the first and second industry's weight in all socio-economic decreased gradually increasing the social impact of the tertiary industry. The 21st century, this trend more apparent.

The tertiary industry in the catering industry is one of the most embodies the people's living standards and economic development of the industry is a microcosm of social activities. With decades of rapid economic growth, the world's food chain is about 10% each year, the rapid development of the world's most promising industries. With the Chinese people's growing material and cultural demand growth, and global economic integration, the world's food chain industry is facing unprecedented competition. But look at the market restaurant chain in China, people are more familiar restaurant brands are mostly foreign brands, such as: McDonald's , KFC and Pizza Hut; the face of our traditional food raging foreign brands, but made no operation force, development difficult. Thus, our restaurant chain in the fierce competition in order to remain invincible, we must emancipate our minds, innovation, upholding the traditional Chinese culture based on the reference advanced operation and management experience, with the times into the theory of courage, analysis of the operating characteristics of successful enterprises at home and abroad, of restaurant chain new problems, new content, exploring new food chain profitable.

Based on the restaurant chain's business strategy of exploration and research, analysis of the domestic and international restaurant chain's business strategy, proposed restaurant chain problems during operations, business strategy on the restaurant chain made the choice and implementation of creative programs for food chain information and choice, particularly in China's food chain, so that restaurant chain management and building a set of new ideas, so as to promote good health food chain development.
